What cookies are you leaving out for Santa this year?
There is nothing better than filling your kitchen with the smell of baking. It's the most homely and inviting smell EVER! We've been feeling rather festive lately and decided to whip up a batch of our easy and simple, yet totally delicious Christmas cookies! They're perfect for any occasion but work so well at Christmas time with all the amazing festive cutters and some pretty festive decorating!
My favourite part! Decorating time! You can get as creative as you like, this year we decided to dip them in melted chocolate and cover them in sprinkles!
Ingredients:
- 75g Icing Sugar
- 1 Egg Yolk
- 175g Butter
- 250g Flour, plus extra for dusting
- Chocolate and sprinkles for decorating
Directions:
- Line a baking tray with baking paper.
- Put butter and sugar in a large bowl and mix together with a wooden spoon until mixture forms a paste. Add flour and mix together until you have a crumbly dough.
- Dust the work surface with flour and tip mixture out onto surface. Roll out the dough until its about 1cm thick.
- Cut out festive shapes using cutters and carefully lay them on the lined baking tray, then pop the tray into the fridge for about 20 minutes to chill. Preheat oven to 190°C.
- Pop the tray of pastry shapes in the oven for 15-20 minutes. Remove from oven and and then transfer to a wire rack to cool completely.
- Once cooled, melt chocolate and dip biscuits and then add sprinkles.
We also decided to make an extra bunch of these to give to our family and friends as little homemade Christmas gifts this year. A handful of cookies into gorgeous gift bags with a festive ribbon on the top! Who doesn't love an edible gift?
The perfect drink to accompany our Christmas biscuits was our new Christmas tea from T2. We picked this up along with this cute Luna Nights tea cup set from T2's Christmas launch party. An amazing night in their oxford circus store marking the beginning of their Joy to the Wild campaign. The perfect Christmas morning brew!
Thank you to T2 for the invite to their Christmas launch party along with these gifts.
