With it being the first official day of summer this week in London, I though what better time to share this fresh summer salad. Think of this salad as a classic BLT, without the bread! It is so incredibly easy to make and perfect take along to a picnic or BBQ and great for those warm nights having dinner out on the balcony or in our case, on the roof top garden. I promise it will be a huge hit!
Ingredients
- 1 cups of cherry tomatoes
- 1 avocado
- 4 cups of lettuce
- 8 slices streaky bacon
- Half a block of feta cheese
- Handful of coriander
- Half a cucumber
Ingredients for vinaigrette
- 6 tablespoons of olive oil
- 2 tablespoons of balsamic vinegar
- 1 tablespoon of mustard
- Juice of a small lemon
Directions
- Chop bacon into thin slices and in a large nonstick pan, fry the bacon over medium-high heat until crispy.
- Chop up everything else into bite size squares and combine in a bowl, add bacon once it's finished cooking and crumble feta over the top
- To make the vinaigrette, whisk together olive oil, balsamic vinegar, lemon juice, and mustard in a small bowl and pour over top of salad once ready to serve.
Ridiculously easy to make and totally delicious!
