Happy Pancake Day!



Yay!!! It's Pancake day, not that we need an excuse to have pancakes! In order to celebrate I thought I would share my easy peasy pancake recipe. The best part about pancakes is the toppings and today I'm sharing my all new favorite toppings too! 


Here is my easy pancake recipe which makes about 4 - 5 pancakes: 


Ingredients:

  • 2 Cups of flour 
  • 1/2 teaspoons of baking powder 
  • teaspoon salt 
  • 2 Tablespoon of sugar 
  • 1/2 Cups of milk 
  • 3 large egg 
  • Tablespoons of canola oil 

Directions:

  1. In a large bowl combine all the dry ingredients and then add milk, egg and oil and stir until mixed well. 
  2. Heat a non-stick frying pan over a medium heat and add a know of butter. When it's melted, add a ladle of pancake mix. Wait until the top of the pancake begins to bubble, then turn it over and cook until both sides a golden brown. 
  3. Repeat until all the pancake mix is used up. 
Now for the best part the toppings!!!

Ingredients: 
  • 300 ml Whipped cream 
  • 1 tablespoon of crushed pistachio nuts 
  • 1 pomegranate 
  • 1 punnet of strawberries 

Directions:

Stack the pancakes in between each layer put strawberries cut in half. Top the pancake stack with whipped cream and strawberries and sprinkle over the Pomegranate and crush pistachios nuts. You can even drizzle with a little bit of honey too!?
