Mango and passionfruit pavlova


I was feeling pretty confident on the weekend and decided to bake my first ever pavlova. I must confess I am one of those people who normally buy the pre-made one from the supermarket. I don't know why I didn't try this sooner as its really easy to make! Its true what they say homemade always taste best! Jake said quote: "This is honestly the best pav I have ever tasted". So needless to say I was super proud of myself! Just call me wifey!

Pavlovas have a habit of deflating and forming cracks when you open the oven. Don't be disheartened, just make some extra whipped cream to fill in the hole if this happens. It will still be a spectacular dessert.


Ingredients: 
  • 7 egg whites 
  • 500g caster sugar 
  • 11/2 Tbsp cornflour 
  • 1 Tbsp cream of tartar 
  • 1 Tbsp white vinegar 
  • 300ml whipped cream 
  • 1 sliced mango 
  • 1/4 cup passionfruit syrup 
  • mint leaves to garnish 

Directions: 

  1. Preheat oven to 100c. 
  2. Place egg whites, sugar, cornflour and cream of tarta into a large bowl. Beat for 5 minutes. 
  3. Add the vinegar and continue to beat for 10 minutes, until the mixture forms stiff peaks that don't fall. 
  4. Line an oven tray with baking paper. Using a spatula, tip the mixture onto the tray and spread into a circle 20cm in diameter. It will spread when cooked. Smooth the tops and sides. 
  5. Place into the oven for 4 hours. Remove from the oven and allow to cool. 
  6. Top with whipped cream and mango slices, and drizzle with passionfruit syrup. 
  7. Garnish with mint leaves.
