Feijoa loaf


Its feijoa season! This loaf is easy to make, delicious and perfect for morning/afternoon tea or the kids lunch boxes...or in my case hubby's lunchbox. 

Ingredients: 
  • 1 heaped cup peeled and sliced feijoas 
  • 1 cup boiling water 
  • 1 cup sugar 
  • 2 cups flour 
  • 1 teaspoon baking powder 
  • 50g butter 
  • 1 teaspoon baking soda 
  • 1 egg, beaten 

Directions: 
  1. Preheat oven to 180 C. 
  2. Place feijoas, sugar, butter and water in a saucepan and bring to the boil, cook gently for 5 minutes and then remove from heat and allow to cool. 
  3. Carefully stir in the dry ingredients and egg. 
  4. Mix until dry ingredents are just moistened. 
  5. Bake in lined loaf pan for 50 minutes until loaf feels firm and a skewer inserted comes out clean.
