Sorry I've been a bit slack on the recipe's lately. I've just been so occupied with the wedding planning. But I had a great excuse to get into the kitchen on the weekend. My nephew Zinzan was down on the weekend and I thought it would be a great opportunity to try out these muffin pancakes I saw on Pinterest.
A pancake you make in a muffin tin! Chuck in some blueberries or chocolate chips. You can put just about anything you would want, it’s a lot faster and much cleaner.
Directions:
- Make pancake mix- Your call, you can use any pancake mix you like but I have added my pancake mix down the bottom.
- Pre-heat the oven to 350 degrees.
- Get a muffin tin and spray in a little non-stick stuff.
- Pour in the pancake mix into the individual muffin slots, about ¾ full
- Drop in your favorite mixings into the muffin slots this is where you can add blueberries or chocolate chips if you like.
- Cook the pancake muffins for 15-20 minutes or until they are firm on top of the muffin. You know, not gooey or collapsing.
- Eat them!! We decided to get whipped cream and strawberries with some maple syrup for ours yummy!
Here is my easy pancake recipe:
Ingredients:
- 1/2 Cups of flour
- 1/2 teaspoons of baking powder
- teaspoon salt
- Tablespoon of sugar
- 1/4 Cups of milk
- 1 large egg
- Tablespoons of canola oil
In a large bowl combine all the dry ingredients and then add milk, egg and oil and stir until mixed well.
