Recipe: Muffin Pancakes


Sorry I've been a bit slack on the recipe's lately. I've just been so occupied with the wedding planning. But I had a great excuse to get into the kitchen on the weekend. My nephew Zinzan was down on the weekend and I thought it would be a great opportunity to try out these muffin pancakes I saw on Pinterest. 

A pancake you make in a muffin tin! Chuck in some blueberries or chocolate chips. You can put just about anything you would want, it’s a lot faster and much cleaner.

Directions: 
  1. Make pancake mix- Your call, you can use any pancake mix you like but I have added my pancake mix down the bottom. 
  2. Pre-heat the oven to 350 degrees. 
  3. Get a muffin tin and spray in a little non-stick stuff. 
  4. Pour in the pancake mix into the individual muffin slots, about ¾ full 
  5. Drop in your favorite mixings into the muffin slots this is where you can add blueberries or chocolate chips if you like. 
  6. Cook the pancake muffins for 15-20 minutes or until they are firm on top of the muffin. You know, not gooey or collapsing. 
  7. Eat them!! We decided to get whipped cream and strawberries with some maple syrup for ours yummy! 

Here is my easy pancake recipe: 

Ingredients: 
  • 1/2 Cups of flour 
  • 1/2 teaspoons of baking powder 
  • teaspoon salt 
  • Tablespoon of sugar 
  • 1/4 Cups of milk 
  • 1 large egg 
  • Tablespoons of canola oil 

In a large bowl combine all the dry ingredients and then add milk, egg and oil and stir until mixed well.
